This workflow automates the organization of invoices and receipts received via Gmail. It extracts key financial data from email content, logs it into Google Sheets for centralized tracking, and labels the email in Gmail as either Invoice or Receipt for easy categorization.

⚙️ Workflow Steps
1. Gmail Trigger
- Listens for new incoming emails.
- Passes email text for processing.
2. Invoice or Receipt Extractor (OpenAI)
- Uses AI to detect if the email is an Invoice or Receipt.
- Extracts structured fields: Date, Vendor, Amount, Currency, Category, and Email Type.
- Skips irrelevant emails.
3. Log Information in Google Sheets
- Appends extracted data to a Google Sheet.
- Stores each entry with structured financial details.
4. If Receipt (Filter)
- Checks the extracted field Email Type.
- Routes the workflow to apply the correct Gmail label.
5. Label Email as Receipt
- Adds Gmail label Receipt to the email for quick reference.
6. Label Email as Invoice
- Adds Gmail label Invoice if not marked as receipt.
